Soup is the dish I turn to when the temperature drops. It’s the perfect way to use up vegetable odds and ends – and it doesn’t matter if they’ve past their best
But while soups are uncomplicated to make, I often lack in inspiration when it comes to flavour combinations. So when Abel & Cole sent me their Superb Souping Box to test, back by popular demand for another chilly season, I saw it as an opportunity to stray from my usual soup treadmill and pack in a few more veg portions to my diet.
The beauty of the box is you receive all the ingredients you need to make three different soups, with the necessary spices already measured out. That means zero waste, minimal prep and a non-committal foray into the unknown.
On the menu in my soup box was spinach and cumin; squash, sweetcorn and sage; and, star and spice plummy beetroot. Collectively, the soups should produce 6–9 servings – so at £14.50 a box, that’s just £1.61 per serve.
